Mushroom risotto – The classic

Mushroom Risotto Ingredients:
– 1 tablespoon olive oil
– 1 onion, finely chopped
– 250 g mixed mushrooms, sliced
– 1 clove of garlic, finely chopped
– 1/2 tsp dried thyme
– 1/2 tsp dried rosemary
– 1/2 tsp dried oregano
– 1/4 tsp ground black pepper
– 1/2 tsp salt
– 1 tablespoon butter – 1 1/2 cups risotto rice
– 1/2 cup white wine
– 4 cups vegetable broth
– 1/2 cup grated parmesan
– 1/4 cup fresh chopped parsley

Instruction:
In a large saucepan, heat the olive oil. Add onion and garlic and sauté for 2-3 minutes until soft.
2. add mushrooms, thyme, rosemary, oregano, pepper and salt and sauté for another 5 minutes.
3. add butter and add the rice, stirring constantly.
4. add white wine and simmer, stirring constantly, until the wine has almost completely evaporated.
5. add vegetable broth and simmer, stirring constantly, until rice is cooked.
Add the parmesan and parsley and mix well.
7. serve the mushroom risotto and enjoy.
