Water kefir (Japanese crystals)

Water kefir is a symbiosis of bacteria and yeast cells, mainly Streptococcus lactis, Lactobacillus brevis and Saccharomyces cerevisae. The resulting beverage is probiotic and very refreshing. The exact origin of water kefir is unclear, but it probably comes from Mexico. Here, crystals that feed on a sugar solution are found in opuntias. The crystals used are apparently identical to a mixed culture that was already known as “TIBI” or “graines vivantes” before World War II.

Water kefir produces a kind of lemonade. It is never the same, the taste of water kefir lemonade depends a lot on the processed fruits, but also on the temperature. It is somewhat acidic and bubbles slightly due to the production of carbonic acid. By adding sugar, the taste can vary individually from sour to sweet. It is very important that our kefir colony never comes in contact with metal. Contact with metal can create a low voltage, which would cause the kefir crystals to die.

What can water kefir be stored and cultured in?

As already mentioned, it is important that the kefir does not come into contact with metal. Therefore, be sure to use a suitable container (e.g., a jar with a glass lid or similar) and the appropriate working material.

What does my water kefir need?

First of all, attention and love. In addition, nuts, lemons, ginger, etc., according to taste, as well as about 3-6 large spoons of sugar. All this goes into our prepared container, where it then matures – according to taste – for 1 to 3 days until the kefir is ready to drink.

How to make our kefir even better

Kefir especially likes water with a high lime content. But it doesn’t always have to be water. Some fruit and vegetable juices are also suitable for fermentation.

What do I do with my water kefir during vacations or when I don’t have time?

There are several ways to store it:

Put the crystals in a small container with strong sugar water and put them in the refrigerator. They will keep for a few weeks.
Freeze the crystals with a little liquid.
Dry the crystals in the sun or in a dehydrator and store them dry, of course.
