Cordyceps – Tibetan Caterpillar Leg Mushroom
This very strong medicinal mushroom comes from the high altitudes of Asia.

According to the stories, the shepherds of the Tibetan plateaus could always observe in spring that their cattle jumped around on the pasture very vital and exuberant. At some point, the herders noticed that their animals liked to eat the caterpillar fungus (Cordyceps) while grazing.
After the little treat, the cattle became more lively, had much more energy and jumped joyfully across the pastures.
As the name implies, the caterpillar fungus grows by caterpillars in the open. The caterpillar fungus grows in the spring and is laboriously harvested by special search parties.

Use of Cordyceps

Mostly the mushroom is offered as powder or extract. The most original form, which is still practiced today, is the warm water extract, i.e. a tea. If you get whole fruiting bodies, they should first be ground small. The finer the better, because only then the beta-glucans, the cordycepin and much more can be properly dissolved. The whole thing becomes really round from the taste and the healing effect, if you add a little honey from the beekeeper around the corner.

A widespread form are extracts or powders. Most vital mushroom preparations and supplements are in capsules, this facilitates the daily intake for many. Also, it should be said that the taste is not everyone’s cup of tea. Especially if the powder was obtained from wild stocks (caterpillars).

Inhalants of the Cordyceps

Cordyceps contains amino acids, minerals and trace elements, as well as some special vitamins:
Cordycepin, nucleotides (adenosine,uridine, guanosine), sterols (ergosterol and others), D-mannitol,polysaccharides (including cyclofurans, galactomannan, beta-glucans, beta-mannans), amino acids (arginine, tryptophan, lysine, tyrosine), fatty acids.

Recipe- Vegan Mushroom Jerky

is made from oyster mushrooms (or other types of mushrooms) and is an excellent, delicious and also healthy snack alternative for vegetarians, vegans and those who want to eat less meat. It is very easy to make and you can of course change the following basic recipe according to your imagination, by simply adding some sesame seeds, chilli, herbs, etc.

Ingredients for 2 people:

approx. 500g fresh oyster mushrooms

approx. 100ml sweet soy sauce

1 tablespoon honey, alternatively e.g. maple syrup

1 tablespoon vinegar

2 tablespoons oil

fresh garlic (alternatively garlic spice)

pepper

Mushroom Jerky

For the marinade,

put the soy sauce, honey, vinegar, oil, fresh garlic (finely chopped) or alternatively garlic seasoning and some pepper in a bowl and mix everything together well.

Next, take the fresh oyster mushrooms and simply tear them into medium sized pieces

Make sure that the mushroom strips are not too thin. Now mix the mushrooms together with the prepared marinade and leave to marinate in the refrigerator for at least 1 hour to a maximum of 12 hours.

Remove the marinated oyster mushrooms from the marinade with a fork and spread them on the tray at even intervals. The mushrooms must remain in the oven for 2-4 hours, at a temperature 50-80 degrees, and should be turned several times in between. This way you will get the best possible consistency. Now leave to cool a little and the vegan mushroom jerky is ready.
