Water kefir is a symbiosis of bacteria and yeast cells, mainly Streptococcus lactis, Lactobacillus brevis and Saccharomyces cerevisae. The resulting beverage is probiotic and very refreshing. The exact origin of water kefir is unclear, but it probably comes from Mexico. Here, crystals that feed on a sugar solution are found in opuntias. What can water kefir be stored and cultured in?

What does my water kefir need?

First of all, attention and love. In addition, nuts, lemons, ginger, etc., according to taste, as well as about 3-6 large spoons of sugar. All this goes into our prepared container, where it then matures – according to taste – for 1 to 3 days until the kefir is ready to drink.

How to make our kefir even better

Kefir especially likes water with a high lime content. But it doesn’t always have to be water. Some fruit and vegetable juices are also suitable for fermentation.

What do I do with my water kefir during vacations or when I don’t have time?

There are several ways to store it:

Put the crystals in a small container with strong sugar water and put them in the refrigerator. They will keep for a few weeks.
Freeze the crystals with a little liquid.
Dry the crystals in the sun or in a dehydrator and store them dry, of course.

Hay algunas cosas estupendas que puedes hacer con los cristales preciosos. Una vez que hayamos abastecido a nuestros amigos y conocidos con el excedente de kéfir, se puede cocinar kéfir, por ejemplo.

Puedes encontrar una receta muy sencilla y deliciosa aquí:

 

Ingredientes
50 ml de aceite
400 g de cristales de kéfir (cristales de kéfir de agua)
1 cebolla(s)
5 cucharadas de copos de avena
200 ml de agua
1 cucharadita de caldo de verduras, instantáneo
1 cucharadita de sal
1/2 cucharadita de pimienta negra
1/2 cucharadita de pimentón en polvo, rosa picante
1 cucharadita de mostaza
1 huevo(s)

 

Primero se pica la cebolla y se fríe ligeramente, luego se pone en un bol con los demás ingredientes y se mezcla bien. Ahora, forme la masa en albóndigas a su gusto.

Coloque las albóndigas de kéfir formadas en una sartén preparada con aceite y fríalas de dos a cuatro minutos por cada lado.
