von Funghi with Mushlove
is made from oyster mushrooms (or other types of mushrooms) and is an excellent, delicious and also healthy snack alternative for vegetarians, vegans and those who want to eat less meat. It is very easy to make and you can of course change the following basic recipe according to your imagination, by simply adding some sesame seeds, chilli, herbs, etc.
Ingredients for 2 people:
approx. 500g fresh oyster mushrooms
approx. 100ml sweet soy sauce
1 tablespoon honey, alternatively e.g. maple syrup
1 tablespoon vinegar
2 tablespoons oil
fresh garlic (alternatively garlic spice)
For the marinade,
put the soy sauce, honey, vinegar, oil, fresh garlic (finely chopped) or alternatively garlic seasoning and some pepper in a bowl and mix everything together well.
Next, take the fresh oyster mushrooms and simply tear them into medium sized pieces
Make sure that the mushroom strips are not too thin. Now mix the mushrooms together with the prepared marinade and leave to marinate in the refrigerator for at least 1 hour to a maximum of 12 hours.
Remove the marinated oyster mushrooms from the marinade with a fork and spread them on the tray at even intervals. The mushrooms must remain in the oven for 2-4 hours, at a temperature 50-80 degrees, and should be turned several times in between. This way you will get the best possible consistency. Now leave to cool a little and the vegan mushroom jerky is ready.
